This wonderful all purpose marinade uses lemon, garlic, and olive oil for its base.

It is perfect for marinating any type of seafood, such as shrimp scampi and works great as a base for grilled Mahi Mahi or your favorite tilapia fish recipes.

Use it on chicken or pork to brighten up the flavors while grilling.

Just soak your meat of choice in the marinade for 30 minutes and prepare as desired.

You’ll find this an indispensable recipe in your kitchen.

Marinade Recipe:
1/2 cup cilantro leaves, parsley or tarragon
1 lemon
1/8 cup white wine, optional
3/4 cup olive oil
1 teaspoon garlic puree or 1 clove minced garlic

Roughly chop the cilantro and carefully remove the zest (outer yellow peel from the lemon). The zest adds a lot of flavor to this marinade.

Next, cut the lemon in half and add lemon juice to a mixing bowl. Add the wine, chopped cilantro and lemon zest, followed by the garlic.

Slowly pour the olive oil into the marinade and whisk quickly until it starts to thicken. This is called an emulsion.
When the marinade has thickened, let it sit about 30 minutes and then pour it over your meat.

My recipe for some good ol’ comfort food – best served over garlicy mashed potatoes. The recipe is listed at the bottom of this sidebar.

Swiss Steak
(all ingredients approx)

2# round steak, cut in 3×4 inch steaks
2 large whole red peppers, rough chop
2 large sweet onions, rough chop
1 (or 2) 1# 12 ounce cans diced tomatoes
1 (or 2) large cans tomato sauce
sea salt
cracked pepper
basil and/or oregano (fresh if possible) otherwise, to taste
*option fresh ingredients from herb garden (I used cilantro, rosemary and red anaheim peppers).

Cut the meat into 3 x 4 inch steaks, set aside. Prepare the onions and peppers giving them a rough cut along with any herbs.

Add tomato sauce to pot, then meat – coat the meat. Add diced tomatoes and stir. Add the vegetables, and stir.

Cook long and slow until the meat falls apart (at least 3 or 4 hours) stirring occasionally. Add the seasonings towards the end of cooking. I cook with the lid on until near the end, where I will then allow a little reduction.

[note] This recipe easily adapts to either a slow cooker or a pressure cooker – depending upon your available time and kitchen resources.

Serve over garlicy mashed potatoes. A hearty fullfilling meal.

I would like to know which herbs you can buy easily in major cities like Delhi, Mumbai, Chennai, Hyderabad, Bangalore, Calcutta… or some other places ?

and, please: is it easy to get fresh bunches of such herbs in the green market, or should you grow them in your own kitchen garden ?

In that case – if you should grow them – is it easy to obtain seeds ?

I know there is
coriander greens (dhania)
curry leaves (kadi patta)
fenugreek leaves (methi)
dill (sowa)
bay (tej patta)
mint (pudina)
basil (tulsi)
but can you find also
other herbs like
chives (chhoti pyaz)
thyme (banajwain)
parsley (ajmood)
rosemary (rusmari)
and any others you might think of ??

Chives you can pretty much get in big cities –Thyme, Parsley Rosemary — I’d say grow your own. You can order seeds online or get them from the States.

Nice thought of growing a variety of green herbs. I would grow Oregano too, if I were you.– my favorite among western herbs, great for Italian dishes.

A Jewish friend of mine is out of town for the summer, and I’m mowing his lawn while he’s away. He’s getting married in August, and as a wedding gift I wanted to plant them a little herb garden in a spot in the backyard that’s now just a bunch of weeds. This guy is an amazing cook, and he’s also extremely proud of his ethnic Jewish heritage, having already introduced me to several traditional Jewish dishes, etc. So, what are some herbs commonly used in traditional Jewish cuisine? I’m going to plant a variety of herbs, but I don’t want to omit anything that would be most useful in a traditional Jewish kitchen. I’m planning to mostly plant perennials, but a few annuals would be fine as well. Thanks!

By the way, I think his family is from Poland.

I’m Jewish & I love to cook, and I have an herb garden. I use a lot of garlic, chives, oregano, basil, dill, parsley and lavender. I think you are a great friend! You are very thoughtful and caring. I’m sure he will use and love what you plant! I use the herbs from my garden all the time! I am of European/Jewish descent as well.
